Fresh Mild Salsa

Fresh mild salsa fresca — great with chips or spooned over fish tacos.

Ingredients

  • 6 ripe Roma tomatoes – peeled, seeded, and finely diced
  • 1/2 medium white or yellow onion – minced
  • 2 jalapeño peppers – seeded and finely chopped
  • 1 large garlic clove – minced
  • 2 fresh cilantro leaves and sprigs (approx. 2 tbsp) – finely chopped
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper

Method

    Prep the Vegetables: Peel the skins off the tomatoes (blanching them briefly in boiling water makes them easy to peel). Slice them open to remove the seeds, then finely dice the flesh.

    Combine: In a medium mixing bowl, toss together the diced tomatoes, minced onion, chopped jalapeños, minced garlic, and chopped cilantro.

    Season: Add the salt and freshly ground black pepper, then stir thoroughly to combine the flavors.

    Chill: Cover the bowl tightly and refrigerate for at least 2 hours before serving. This resting time allows the juices to release, the flavors to meld, and softens the sharp bite of the raw onions and garlic.

    Serve: Give it a quick stir and enjoy chilled!
