Ingredients

  • 2 lobster tails (3 ounces each)
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 pinch cayenne pepper
  • 1/2 cup salted butter
  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped

Method

    Prep the Lobster: Cut down the center of the top shell with kitchen shears. Stop right before the tail fin. Lift the meat up and rest it on top of the shell.

    Season: Mix the scaled paprika, garlic powder, onion powder, salt, pepper, and cayenne in a small bowl. Brush the meat lightly with olive oil. Sprinkle the spice rub evenly over the meat.

    Make Garlic Butter: Melt butter over low heat. Sauté garlic for 1 minute. Stir in lemon juice and parsley. Divide into two bowls (one for grilling, one for dipping).

    Grill (adjusted time): Preheat grill to medium-high heat (400°F). Place tails flesh-side down for 2 to 3 minutes. Flip so the shells rest on the grates. Spoon garlic butter over the spiced meat. Close lid and grill for another 2 to 3 minutes. Remove immediately when meat turns opaque white and hits 140°F.
