Ingredients
- 1 lb assorted hot peppers, stems removed
- 5 whole tomatoes, halved
- 1 whole garlic bulb, separated into cloves
- Drizzle of olive oil
- 1 tablespoon sea salt
- ½ cup apple cider vinegar
- 2 tablespoons raw cane sugar or palm sugar
- ½ cup water (more as needed for thinner sauce)
Method

Roast: Heat the oven to 400°F. Line a sheet pan with parchment. Arrange tomato halves cut-side down with the peppers and garlic cloves around them. Drizzle with olive oil and a few pinches of salt. Roast about 30 minutes, until the pepper skins start to brown.

Blend: Peel the roasted garlic. Add peppers, tomatoes, garlic, vinegar, sugar, remaining salt, and water to a blender or food processor. Purée until smooth. Thin with a splash more water if you want a runnier sauce.

Finish: Strain through cheesecloth or a fine mesh if you prefer it seed-free. Refrigerate up to about a month.
