Ingredients
- 1 tablespoon olive oil
- 2 medium carrots, diced small
- 2 small zucchinis, diced small
- ½ large onion, diced small
- 6 celery ribs, diced small
- 2 cloves garlic, minced
- 1 (28 oz) can diced tomatoes
- 1 tablespoon Italian seasoning
- 1 tablespoon dried basil
- 32 oz vegetable broth
- 1 (15 oz) can great northern beans, drained
- 1 (15 oz) can kidney beans, drained
- ½ cup pasta
- 2 cups water, as needed
Method
- 01
Soften the vegetables: Heat olive oil in a large pot. Sauté zucchini, carrots, celery, and onion about 10 minutes until softened.

Build the soup: Stir in diced tomatoes, Italian seasoning, and dried basil. Add broth, pasta, and both beans. Simmer about 10 minutes. Add up to 2 cups water if you want a thinner soup.

Finish: Press or stir in the garlic and simmer another 10 minutes. Serve warm, with Parmesan if you like.
