Spiced Turkey Bowl

Spiced Turkey Bowl — Gregg's kitchen version, ready for the table.

Ingredients

  • 1 lb Ground turkey
  • 1 cup Rice
  • 1 can (15 oz) Black beans (rinsed and drained)
  • 1 Head of broccoli crowns (cut into bite-sized florets)
  • 1 tbsp Olive oil (for the skillet)
  • 1 tsp Butter (for the broccoli)
  • 2 tsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Smoked paprika
  • ½ tsp Cayenne pepper
  • ½ tsp Red pepper flakes
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 3–4 tbsp Water (to make a light glaze)

Method

    Start the Rice (Set and Forget): Rinse 1 cup of rice in a mesh strainer until the water runs clear to remove excess starch. Add the rice to your rice cooker bowl. Add the required water (typically 1 to 1.25 cups of water for white rice, or follow your machine's lines). Press Start and let it run.

    Prep the Spices & Veggies: Measure out all your dry spices (chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper) into a small bowl. Stir to combine. Chop your broccoli head into bite-sized florets and set them aside in a microwave-safe bowl. Open, drain, and rinse your can of black beans.

    Cook the Turkey & Beans: Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the 1 lb of ground turkey. Break it apart into fine crumbles with a spatula. Cook for 5 to 6 minutes until entirely browned. Turn the heat down to medium. Sprinkle your custom spice blend evenly over the meat. Stir vigorously for 1 minute to toast the spices in the pan oil. Add your rinsed black beans and 3 to 4 tablespoons of water. Stir well. The water will dissolve the spices and coat the turkey and beans evenly. Simmer for 2 to 3 minutes until the liquid is absorbed. Turn off the heat.

    Steam the Broccoli: Take your bowl of broccoli florets and add 2 to 3 tablespoons of water to the bottom. Cover the bowl with a microwave-safe plate or paper towel to trap the steam. Microwave on High for 2.5 to 3 minutes until bright green and tender. Carefully drain the excess water. Toss the hot broccoli immediately with butter, a pinch of salt, and pepper. Squeeze lemon juice if available.

    Assemble the Bowls: Layer a base of fluffy rice into your bowls or meal prep glass containers. Scoop a generous portion of the seasoned turkey and black bean mix right next to it. Fill the remaining space with your seasoned steamed broccoli.
